The tvp will absorb the liquid and stay moist, not dry or soggy. Then cook.]]>

You could certainly bake them. The question is, are you trying to avoid the oil? I would still drizzle oil on them when baking because it makes them more sausage-y. I think I gave up on tvp crumbles in the past because I never thought to fry them in oil (or probably anything in oil) then. Now that I am full-fledged vegan, I do not fear the oil. It makes the hair shiny and the skin so soft. Make food yummy!!]]>

Needless to say, I didn't qualify for Boston.  However, I am proud to say that in the course of eighteen months that I cut my marathon time down from 4:57 to 4:12.  I'm proud to say that through much effort and good coaching that I'm a better runner.  One day I'll qualify for Boston, it just won't be this year, or likely next year since I'll be shifting my focus to Ironman training.

However, I decided to run the CIM Marathon after all.  I'm already signed up and I love doing long training runs, so I'm going to just do it.

I have only been running three days a week.  Last week, I ran 4 miles on Monday, six miles of hills on Friday morning, then twenty miles on Saturday morning.  Perhaps the six miles of hills on Friday made Saturday's run more painful than it needed to be.  Nonetheless, I finished the long run.

Another thing I've noticed with less exercise is that I can't get away with eating quite as much.  In peak training for my 70.3 (half-Ironman distance) races, I could easily maintain my weight on 2700-2800 calories per day.  Now, doing only about an hour of cardio 5-6 days per week and two days of weights, it's more like 2400 calories per day.

I feel great.  Relaxed.  Eager to start Ironman base training in January.

I went with tempeh instead of tofu and also made a few other changes and I ended up with a scrumptious meal that came together very quickly.

Creamy Broccoli with Tempeh (adapted from Nava Atlas)

4 Tbs. olive oil, divided
2 cloves garlic, minced
1 green bell pepper, cut into strips
2 large heads broccoli, cut into bite-size pieces
1 c. rice milk
2 Tbs. flour
3 Tbs. nutritional yeast
salt & pepper to taste
2 8-oz. packages tempeh, cut into strips
2 Tbs. soy sauce

Heat 1 Tbs. oil in a very large skillet over medium heat and saute garlic for about 30 seconds. Add bell pepper, broccoli and 1/2 c. water. Cover and cook over medium heat until broccoli is just getting tender. Whisk flour and nutritional yeast into rice milk, stir into broccoli and cook until thickened. Season with salt and pepper. Meanwhile, heat remaining oil in another skillet over medium-high heat and fry tempeh strips until they're starting to get brown. Stir in soy sauce and cook for another minute or two. Serve broccoli over rice with tempeh on top.


We also got our broccoli fix recently from the Broccoli Quiche recipe from Vegan Brunch. This time we made the recipe as is and it came out great. I'm too lazy to type in another recipe and anyway, you really need to buy this book if you haven't already. And trust me when I tell you this is definitely a recipe you have to try.

I am fully booked in both my personal and professional life, and that leaves little time to get creative in the kitchen. And, as you have noticed, it leaves little time to blog. So, tonight I thought I would give a roundup of stuff that I have been making lately to point you to gems from the past that you may have missed the first time around. The weather is getting cooler, but is still generally above zero and we have yet to get snow. Huzzah! As you can see from the pic above, soup has been a go to dish these days--packed full of a variety of veggies and perfect with a few slices of freshly baked baguette. This one is kind of like a minestrone, and I have found that I can add slices of kale or chard and the kids will still gobble it down (which is great, because a pile of kale or chard on the plate leads to wailing and gnashing of teeth). I also made Ethiopian stew one night (along with injera from Vegan Lunch Box) and was reminded about how awesome the flavours are. Must make more Ethiopian food, especially because the kids love eating without forks! I also made use of the last pumpkin kicking around the house to make Hearty Autumn Muffins--these are so awesome and full of fibre that you will be happily regular in no time! It was also a way to use up the 100 lbs (or so it seems) of apples I bought to make applesauce. OK, that's it for now, and I promise to be back soon with some new food.

The November 19th installment of Vegan Drinks featured a solid lineup. Fresh faces mixed with the very familiar ones. DJ Lil Ray kept the crowd in steady beats. Angels & Kings bartender Jesse replenished drinks effortlessly. And, David from Farm Sanctuary helped us all to adopt turkeys, pigs and cows just in time for the start of the winter holiday season. We owe a special thanks to our friends who donated Farm Sanctuary memberships and adoptions for us to give away to three lucky folks in the crowd.

The people lined up to spread their messages during "Shout Outs." David announced a plethora of upcoming Farm Sanctuary events. Joyce introduced us to Pets for Life NYC. Kneel revealed that Vegetable Slut has a new Web site and vegan-friendly designs for sale. Abby made an appeal for one of the dogs on Friday's euthanasia list at Animal Care & Control and offered her assistance to anyone who could foster the dog. We plugged Isa Chandra Moskowitz's and Terry Hope Romero's new cookbook, Vegan Cookies Invade Your Cookie Jar, which will get the book release party treatment at MooShoes this Tuesday, November 24th, at 7pm. (Free cookies and sandwiches, y'all!) And, the über talented Mascha returned to Vegan Drinks with her completed photo project, VEGAN NY, which was projected on one of the bar's walls.

For starters, there is the rodízio, like Porcão. The rodízio is the Brazilian version of dim sum, only with chunks of dripping meat instead of ingenious little morsels.

Servers wander the dining room brandishing knives festooned with meat. Then, taking note of an intricate code, they proffer their wares to the willing. If you want more meat, you flip your Meat Signal to the green side and its Sim Por Favor legend. If you are some kind of weirdo who doesn't want to keep eating meat, you set your coaster on its red side: Não Obrigado.

Our "favorite" aspect of this is that the pig's demeanor is not dependent upon your choice to eat him. "Yes? You want more? Excellent, sir!" "Oh, you're done eating the flesh of my family? Very good!"

He wants merely to be a part of the festivities. If you're flashing the red flag, there's always the chance you'll make room for more meat in a little while. And so, like the waiter who knows that a smile and pleasant attitude can secure a tip from even the sourest patron, the tuxedoed pig knows that his affability is his best shot at being eaten.

Thanksgiving is a devastating time of year for vegans, when we cry into our bland veggie soup while meat eaters feast around us, knowing deep down in our souls that we're missing out on one of life's great pleasures...

Oh, wait, no. That's just the lie that meat eaters tell themselves to justify their refusal to take responsibility for their own destructive choices.

In fact, with its wide array of freshly harvested delights, Thanksgiving is a cornucopia for vegans. Even the New York Times is getting in on the act, blogging about Going Vegetarian for Thanksgiving and posting recipes (I'm making the Fiery Sweet Potatoes).

As usual, many of New York City's best vegan restaurants have risen to the occasion. Here's SuperVegan's round-up of where to eat vegan in NYC for Thanksgiving; make your restaurant reservations asap!

Angelica Kitchen is offering a five course prix fixe menu for $50; BYOB to save money. Thanksgiving is the only night Angelica takes reservations, so folks won't have to queue up in the cold like usual. The dinner will also be available for take out from the juice bar. Say hi to SuperVegan's own Olivia Lane, who will be hostessing in the afternoon.

Blossom and Blossom Uptown (the former Cafe Blossom) are offering the same three-course menu for $68, with reservations available between 3-9pm.

Candle 79's four course prix fixe is $70, while sister restaurant Candle Cafe gives you four courses for $52, plus a la carte options.

Caravan of Dreams will have Thanksgiving options in addition to their regular menu.

Counter's got seatings from 12pm-9pm for their $50 four course prix fixe, plus an optional $25 wine pairing.

Curly's will be serving a four or five ("depending on how you count them") course prix fixe menu for $26.95.

Hang out with Laurie Anderson, Lou Reed, Peter Max, and Ally Sheedy at Farm Sanctuary's Celebration FOR the Turkeys this Sunday at Tavern on the Green. You can even get the latest word on author Jonathan Safran Foer's not-quite-veganism from the man himself. The event is currently sold out, but you can call to get on the waiting list.

NYC's all-vegetarian grocery store, Integral Yoga Natural Foods, has many prepared vegan Thanksgiving foods. It's currently offering a 10% discount on holiday desserts, pies, cakes and brownies (most are vegan; they've got a list with ingredients on their website).

Organic Grill will have a special Thanksgiving menu in addition to their regular menu.

Chef Ouiya has both prix fixe and a la carte options for delivery or pick up. Check out the menu here and make sure to get your order in by Saturday the 21st.

Perelandra Natural Food Center has a selection of prepared vegan Thanksgiving foods.

Pure Food and Wine will once again be serving the most expensive vegan Thanksgiving meal in NYC. Their four course prix fixe is $72; select items from their regular menu will also be available.

Red Bamboo will be serving their regular menu and a $21.95 Thanksgiving prix fixe menu. Red Bamboo Brooklyn will offer a three course prix fixe after 4pm at an as-yet-undecided price. (Jeez, people, Thanksgiving is less than a week away!)

'sNice and 'sNice Brooklyn are both closed Thanksgiving day, but we recommend you stop by in the days before or after to try their awesome Thanksgiving Leftovers sandwich.

WholeFoods has their same old Vegan Thanksgiving Dinner for one. At $19.99, it includes curried apple pumpkin soup, a stuffed holiday roast, green beans with almonds, and mushroom gravy. Dessert is now sold separately, packaged with bread.

You already missed the Woodstock Farm Animal Sanctuary's 2009 Thanksliving, but you can sign up for their mailing list to make sure you don't miss out next year.

The more than two dozen monkeys in NASA's crude experiment will be zapped with a massive dose of radiation at Brookhaven National Laboratory in Long Island, New York, and then spend the rest of their lives condemned to a laboratory at Harvard's McLean Hospital where they'll be enlisted in a never-ending series of experiments to assess how the radiation devastates their brains and bodies. NASA has admitted that the radiation is "going to cause some cellular damage." What they really mean is that the monkeys may likely suffer from brain damage, cancer and premature aging.

It goes without saying that you should urge NASA to abandon these abhorrent experiments ASAP.

It's official: Oprah will end her show in 2011. Feel that collective surge of sadness? We sure do. Oprah's groundbreaking program has transcended the talk-show format and has paved the way for social and political change. In honor of PETA's 2008 Person of the Year and her show's long run, we're revisiting Oprah's best animal-friendly episodes:

  • Oprah's week-long move from Chicago to Amarillo was the move followed 'round the world. She captivated millions with her court appearance to defend her 1995 episode that revealed the horrors of a beef industry rampant with mad cow disease.
  • Inspired by guest Kathy Freston's book Quantum Wellness, Oprah went vegan for three weeks and marveled, "I never imagined meatless meals could be so satisfying."
  • Oprah dedicated an entire episode to exposing the stifling, crippling conditions of chickens, cows, and pigs on factory farms as Californians prepared to vote on Proposition 2. The measure passed by a large majority—in part thanks to her revealing show.
  • After Oprah saw a billboard off the Kennedy Expressway that read, "Oprah: Do a show on puppy mills. The dogs need you," she immediately jumped at the opportunity to save lives. Just a few minutes of her horrifying exposé were enough to convince viewers that adopting from an animal shelter is the only way to go.
  • My food envy was raging when Chef Tal Ronnen cooked his "Chicken" Scallopini and other delectable vegan meals on a recent episode of the show.
  • When Charla Nash decided to show her face to the public for the first time earlier this month, it's no surprise that she chose to do it on Oprah's show.

The media mogul may be bidding farewell to her legendary talk show, but with the upcoming launch of her new cable network, we're sure that we'll be seeing a lot more of her for a long time to come.

For nearly a decade, PETA has been working with Windsor and other area towns to provide homeless animals in their care with better housing conditions and a peaceful end when euthanasia is the most humane option.

In 2000, PETA was alerted by a caring police officer to terrible suffering and appalling conditions at several "animal shelters" in North Carolina, some of which were nothing more than outdoor shacks, like the one in Windsor. Dogs and cats left inside these outdoor "coops" suffered without heat in the winter and air conditioning, or even fans, in the scorching summer. As a result, some animals literally drowned or froze to death at some town facilities. When no homes could be found for them, many were killed by gas poisoning or gunshots.

Today, we are thrilled to announce that this week, PETA representatives were joined by Windsor's mayor, Robert Spivey, and several other county officials to celebrate the town's new animal shelter, funded entirely by PETA, to ensure that homeless animals in Windsor are housed comfortably and humanely from here on out. We've reasoned with zoo officials. We've enlisted support from experts and celebrities. And we've called on caring supporters to write letters pushing for Lucy's retirement.

Unfortunately, it took proposed litigation against the city of Edmonton for zoo officials to make a pathetic attempt to improve Lucy's sad state and announce their "plan" to improve her life by putting her on a diet, giving her some sand to stand on—and possibly providing her with a treadmill.* We responded to this craziness with a full-page ad, which ran yesterday in the Edmonton Journal.


Lucy

The zoo's policy of locking Lucy inside during the long, bitterly cold winters means that Lucy spends most of her time in a small barn. When she is allowed outside, she's primarily restricted to an enclosure that is less than an acre in size. It's no surprise that Lucy exhibits signs of mental distress, and her medical records reveal that she has been suffering from arthritis as well as chronic foot and respiratory problems.

It's time that Edmonton Zoo officials made the decent decision to help Lucy by retiring her to a sanctuary where she can enjoy warmer temperatures, acres of space to roam, and the company of other elephants. Please help by sending your polite comments to Edmonton's mayor and city councilmembers.

How long have you been vegan?

Since 1993. Old school. My recollection is that it may have been before the world was in color.

Are you vegan for health, environmental, animal rights reasons, human rights reasons, or a combination?

I wish I could say it was because in Carl Sagan’s novel Contact, our species’ first communication with non-Earthlings was with a civilization near Vega, but it’s really because it reduces animal cruelty and environmental degradation. [Ed., AHH! Jonas wrote about that too! Dorks unite!]

What is your favorite animal?

My late dog, George. Late as in passed away four years ago; he was generally very punctual. You can watch a seven-minute slide show of his life if you’d like. (Give it a few seconds to start and turn your speakers on.)

Do you have any super cute photos of animals to share with us? I just ask because this is something we’re super into. Elephants, piglets, and pit bulls are a plus.

Favorite vegan food to make?

Really anything that can be put inside a tortilla/wrap. It’s a very fast and clean way to eat.

Currently, the vegan “chicken” burrito that’s being tested at a DC Chipotle is rocking my world. Since you’re in SF, I tip my hat to Herbivore’s shawarma, too. (Note that both of these are in a wrap.)

You travel a lot for work. Based on food options alone, which is your favorite city to travel to?

NYC is pretty hard to beat. That said, I was at Araya’s in Seattle recently and loved it. All-vegan, all-you-can-eat buffet for $8. Respect.

Any eating tips for traveling vegans?

You started an all-vegan band in high school? Please elaborate.

I didn’t start the band, but I was the singer of the DC hardcore band Crime Against Humanity. We put out a demo tape and played about half a dozen shows in 1994 before breaking up. We were this close to making it big. And by “this close,” I mean not close at all.

We recently met Jonathan Safran Foer (we call him “JSF” around here) who mentioned that he went to high school with you? Were you guys friends? What was he like then? Was he in the band!?

Jonathan is an awesome guy and his success with Eating Animals makes me so happy. I regret to say he was never in Crime Against Humanity. We did go to high school together and knew each other back then, but we didn’t become friends until long after that.

If you weren’t working for HSUS, what would you be doing?

Begging Vegansaurus for a blogging job. [Ed., Great, now we have to get you fired! WHY DID YOU TELL US THAT!?]

Who are the movers and shakers in the animal protection world who people might not know about, who to keep an eye on to do great things?

It always surprises me how few people in the movement are familiar with the late Henry Spira’s work. If you haven’t read his biography, you should. In terms of living activists, I’m always amazed at how groups like Mercy for Animals, Vegan Outreach, and Compassion Over Killing get so much done with so few resources. Of course, I love VegNews too, and think they provide a great resource for the movement. Finally, if you don’t follow Jason Matheny’s work on in vitro meat, check it out; it’s something I think has a lot of promise for animals.

How do you think new technologies, like Facebook and Twitter, are changing the game?

They allow me to share photos of my cats and find out who’s dating who. They also enable folks to reach a lot of people fast, which is helpful for people who want to help animals. What advice would you give people with a budding interest in animal protection?

The reality of how deplorable the scope and nature of our abuse of animals is can be depressing. Don’t let that sorrow consume you. I’m not the first to say that if you’re upset by a societal problem, don’t agonize—organize!

Animals can’t organize and advocate for their interests, so they’re dependent on us to speak up for them. It’s an immense privilege to be able to work full-time on their behalf, and it’s inspiring to see the progress that’s now being made, especially for farm animals. That said, you don’t need to be an employee of the movement to make a difference. Go at your own pace – pass out leaflets, write letters to the editor, support your favorite animal charities, get your local restaurants to add vegan options to their menus, call your legislators, be a positive example for your friends and family, and so on.

Are you a good cook?

Compared to Tal Ronnen? No. Compared to Josh Balk? Yes.

It irks me to no end that I can’t get a decent picture now that it gets dark so early. Please forgive the photos and the insufficient lighting. Please know that, pictures aside, this is really a great dish. So satisfying and delicious. Everything I like about a Thai style soup; coconut, lime, lemongrass and ginger thrown together with crisp stir-fried vegetables and thick udon noodles. And the best part? It’s meant to be slurped up out a big bowl. If you upped the amount of coconut milk and lime, it could be a soup, but I wanted it to be a saucy noodle dish. So, so good. 

Curried Udon Noodles

  1. 1 tbsp peanut oil
  2. 12 ounces fresh udon noodles (or 2 single serving packages)
  3. 1/2 package extra firm tofu, cut into cubes
  4. 2 carrots, cut into matchsticks
  5. 1 red bell pepper, cut into matchsticks
  6. 2 baby bok choy, ends trimmed off and discarded, cut lengthwise into ribbons
  7. 1/2 cup snow peas
  8. 1/3 cup frozen shelled edamame
  9. 1/3 cup fresh mushrooms (I used oyster mushrooms) coarsely chopped
  10. 4 green onions, chopped diagonally

For the Curry Sauce -

  1. 1 cup coconut milk
  2. 3 stalks lemongrass
  3. 2 tbsp vegetarian fish sauce (available at places like Layonna’s OR MAKE YOUR OWN!)
  4. 3 limes
  5. 1 tbsp sugar
  6. 1 tsp curry powder
  7. salt to taste

Trim the stalks of the lemongrass and bruise to release the oils. Remove the outer stalks from the inner core. Mince the core and set aside (should provide about 1 tsp). Cut the stalks in half and place in a saucepan with the veg fish sauce, juice of 2 limes and the lime rinds. Cook over medium-high heat for 5 minutes. Add the coconut milk, curry, minced lemongrass core, and sugar. Continue to cook while stirring until the mixture is yellow. Remove from heat and salt to taste, set aside.

Heat the peanut oil in a saute pan over medium heat, and bring a pot of water to boil. Add the tofu and stir fry until slightly browned. Add the carrots and mushrooms, stir for a minute more. Next, add bell pepper, edamame and snow peas. Saute until the vegetables are tender and then add bok choy and green onions. Turn off the heat and stir until the bok choy is wilted.

While stir-frying vegetable, cook the udon noodles for about 3 minutes (or according to package directions). Toss noodles in a large bowl with the vegetables, tofu and curried coconut sauce. Salt to taste and serve while warm.

Vegan Chocolate-Hazelnut Praline Lava Cake

DH was at work when I had lunch today and I decided to indulge a craving for vegan "seafood" while he wasn't here. Don't misunderstand me-- I wasn't sneaking any goodies while he was slaving away in the bakery! He never liked seafood, even as an omni, and he still hates anything remotely "fishy" (even seaweed!)! But he very kindly brought me a small bag of frozen Chinese mock "shrimp" from West Best Vegetarian store in Vancouver (4934 Victoria Drive, Vancouver, 604-323-2362) when he was over there earlier this month. (They sell Chinese vegetarian "mock meats", etc.. I have since discovered that our favorite Asian store in Nanaimo, Man Lee, now sells mock "shrimp" and some other frozen "mock meats", and they also now have 2 locations, one in the Terminal Mall, and one just across Applecross Road from Costco.)

So today, yet another soaking wet, windy November day (we had no power for a day-- it went on again this morning), I decided to treat myself for lunch and made the following simple Indian-style curry. Mmmmmmm! It would make a good company meal with a vegetable dish to accompany it. And it's low in WW Points, too!

BRYANNA'S VEGAN ALMOND MOCK "SHRIMP" CURRY
Servings: 4


This is deceptively fast and easy to make.

Tofu Creme:

1/2 cup extra-firm silken tofu
1/2 cup nondairy milk
Curry:
1 tablespoon olive or peanut oil
1/4 cup ground almonds (if you grind them yourself, use a dry electric coffee/spice grinder)
4 large cloves garlic, minced or crushed
1 large tomato, chopped small, or about 3/4 cup drained, chopped good-quality canned tomatoes
1 teaspoon sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon garam masala or good curry powder
9 1/2 oz Chinese vegan mock "shrimp", thawed (approximately 32)
Garnish:
chopped fresh cilantro or dried cilantro (use about 1/3 as much dried cilantro as you would fresh)
OR you can use fresh parsley instead, if you wish

Blend the tofu and nondairy milk together in a blender, food processor, or with a hand/immersion blender until smooth. Set aside.

Heat the oil in a large nonstick skillet over medium-high heat Add the almonds and stir until the they turn golden-- quickly add the garlic and stir briefly. DO NOT BROWN!

Add the tomato, sugar, cayenne, salt and garam masala. Cook for a few minutes, scraping the pan so the mixture doesn't stick, until the tomatoes soften a but. (Add a bit of water if necessary, but not too much.) Add the mock "shrimp" and then the Tofu Creme. Stir briefly. Lower the heat a little and stir-cook just to heat the shrimp and until the sauce is creamy. The sauce will be thick-ish, and not too wet. There is not a lot of sauce in this recipe and most of it will cling to the "shrimp".

Serve over steamed brown basmati rice, garnished with cilantro or parsley.

I talked with a knowledgeable nurse friend yesterday, a woman who takes care of the health needs of hundreds of teenagers.  She sees patients all day long every day, many of whom have flu.  She told me yesterday that H1N1 is waning at present.  But it's expected to peak again in another month or two. In the next wave, she predicted, much or most of the U.S. population who haven't had H1N1 will get it - at least, those who haven't been vaccinated.  She said successive outbreaks of a pandemic flu within one year tend to be worse with each successive wave.

Her comments jibe with articles I read today in the Charlotte Observer and on the CDC web site. The CDC says that visits to doctors for flu-like illnesses have decreased nationally for the last two weeks, after climbing for the previous four weeks.  But, says the CDC, "Total influenza hospitalization rates for laboratory-confirmed flu continue to climb and remain higher than expected for this time of year. Hospitalization rates continue to be highest in younger populations, with the highest hospitalization rate reported in children 0-4 years old. The proportion of deaths attributed to pneumonia and influenza....continues to increase and has been higher than what is expected for six weeks now.....Almost all of the influenza viruses identified so far [this fall] continue to be 2009 H1N1 influenza A viruses." [As I reported in an earlier post, pneumonia is the usual cause of death in fatal H1N1 cases.]

So, apparently, the total number of cases has been dropping nationally for the last couple of weeks, but is the H1N1 virus becoming more virulent?  More dangerous?  What else would lead to higher hospitalization and death rates, in spite of dropping numbers of people infected?

Which leads one to wonder about the vaccine.  The limited supplies are supposed to be going to pregnant women, children 6 months and older, young adults up to 24, anyone with a chronic medical condition, health-care workers, and emergency responders.  Yet, that's not always happening.  I went over to my local County Health Department a week ago to get a shingles shot (at least 6 people close to me have had shingles in the last year!), and while I was there, the staff asked me if I wanted to get an H1N1 shot.  I said no, because I'm not in a high-risk group. Corroborating my experience, there are numerous reports in the newspaper of lower-risk people being offered shots.  No one's too upset about that right now. But that could change. I would like to get the vaccine for myself and my family before the January wave hits. Wouldn't we all?  I looked on the CDC web site under "2009 H1N1 Influenza Vaccine Supply Status" dated 11/17/2009.  Unfortunately, it's remarkably not helpful, almost as if they intended to make it indecipherable. I just want to know, when will the vaccine be available for everyone who wants it?  Will it get here before the next wave, which will likely have higher mortality rates?

One of the nicest (and sneakiest) ways that you can show others how fantastic vegan food is, is to offer to prepare the Thanksgiving meal—or at least some of it. The following are the top five recipe cheats that help to veganize many a traditional holiday dish:

1) Vegetable broth. If your family tends to use chicken stock for everything, vegetable broth is a simple substitution that costs about the same and comes in boxes or cubes and can act just like chicken broth.

2) Vegan margarine is the perfect substitute for cholesterol-laden butter. Just use it exactly the same as you would butter in all your cooking.

3) Plain soy milk. For recipes that call for milk, you can just use the exact same amount of soy milk to replace the milk.

4) Silken tofu. You might not expect your Uncle Bill to enjoy tofu, but hidden inside a pumpkin pie, it just might not seem so scary after all.

5) Just make a vegan green bean casserole. This isn't an ingredient per se, but it is a secret weapon that helps to ensure a magical Thanksgiving dining experience for all. Woo them with this veganized recipe for the classic holiday dish.
